Default HD engine temperature is

one of those things that can cause endless talk on forums. I would say if your bike is stock, don't get overly concerned unless you have some specific suspicions of problems. Oil temperature, measured in the oil tank, is an average of temperatures in the engine. Imagine the temperatures in the heads near the exhaust valves.
I use one of the best synthetic oils that I hope can handle the heat in the hottest parts of the engine. Modern engines are really oil cooled and that is why pistons can be light with short skirts, lighter pistons allow lighter connecting rods, lighter cranks...
Gatorturf, I think 220 is the minimum temp you want to see and a high temp of 250 for regular oil, which starts to breakdown over 275. A full synthetic oil should handle 300 ish.
